Chicken and Brown Rice Soup
This is a follow up recipe from the last post- a good quick, no-frills, nourishing soup, using the broth and left over chicken from earlier in the week. Because of the seasoning on the chicken I used, it needed little more than a squeeze of lime at the end (I would have also have thrown on a little chopped cilantro [coriander] if I had some). If you use chicken that is not seasoned with any spice, it will still be delicious or you may choose to add up a tsp each of paprika, cumin and ground Corriander seeds to pep it up, put them in just after you add the garlic. When I use broth, I like to add in some of the fat, rather than just throwing it away- it's what makes it taste like a warm hug from your grandma, which has to be good for you.
