A short and sweet newsletter today. It’s the end of summer, vegetables are in their prime and the less time I spend in the kitchen the better! I got a beautiful cauliflower the other day from a friend’s garden and prepared it this way. Cauliflower is such a great substitute for meat as a main dish. I served it with nothing more than some good bread- I had some homemade focaccia- and a salad of fresh tomato and mozzarella.
I love this dish. It’s great alone- with some good bread or rice to mop up the flavour- or as part of a larger meal. I also love to cook chicken the very same way- simply replace the cauliflower 4 or 5 chicken thighs (whole or cut up, skin on or off!) and cook for 40 mins.
