A Perfect Lunch, Part 1
Sumac chicken roasted over potatoes, crunchy salad with buttermilk dressing and more
There is not really too much to say about this meal, except that it was delicious and I could eat it all year long. I especially love roast chicken and potatoes when the weather is warm and you can sit outside and have a long luxurious lunch. I had a dream for a long time of owning a rotisserie so that I could serve rotisserie chicken cooked over potatoes, their juices slowly dripping down and melting into the potatoes as they cooked. Alas, I have given up that dream, but this comes pretty darn close to the effect, and is far more relaxing to just cook this for my family at home- honestly its about the quickest, easiest thing to prepare. A salad of crispy lettuce and creamy dressing, a few herbs scattered in is all you need to serve it with, though I am also including a recipe for a lentil and beet salad that is also very good alongside. To finish, a soft and light strawberry hazelnut cake, I will publish that separately (part 2).
