This is a good everyday muffin recipe using honey as a sweetener rather than cane sugar. I love using honey in sweets and desserts, it is loaded with flavour and is more beneficial to your health than plain white sugar. If you are not so into the flavour of honey, simply sub your regular baking sugar or a combination of white and brown sugars, my mum also just suggested coconut sugar, which has a stronger flavour than regular sugar, but works a treat in baking. I used fresh figs as I had some available, but fresh or frozen blueberries, raspberries or plums would also be delicious. This is also a nice way to introduce whole grains into your (or your kids!) diet. Here I have used a whole wheat spelt flour, but buckwheat, rye, emmer, Kamut or just whole wheat would also be good.
I browned my butter here, which adds a nutty depth to the flavour, but it is an extra step and isn’t really neccessary, in which case just melted and cooled butter is great. To brown butter, simply place butter in a small pan over low heat and allow to melt and then bubble and colour. Just before it burns, when it smells heavenly and is a dark nut brown colour, remove from the heat and quickly pour into another bowl to stop it cooking any further.
Honey spelt muffins w lime and fig
3 eggs
1/2 c yoghurt
1/2 c whole milk
1 1/4c honey
2T lime juice
1/2 c olive oil
1/2 c melted browned butter
1 c Ap flour (plain flour)
1 c spelt flour
2 tsp baking powder
Pinch salt
Zest 2 limes
3 ripe figs cut to make 12 pieces (or sub other fruit such as blueberries or plums)
preheat oven to 350*F or 180*C (330* or 160* if using fan forced)
Whisk all of the dry ingredients together in a large bowl and make a well in the center.
In a separate bowl, whisk together all of the wet ingredients, then pour into the well in the dry ingredients. Mix until just combined.
Spoon into a 12-cup cupcake tin lined with pans or a 9inch cake pan. Arrange fruit evenly over the top. For cupcakes, bakes for 25 mins, for a cake bake for 50 mins or until a skewer inserted into the center comes out clean.
